Honey-Lime Chicken Kabobs & Mango, Avocado, Grilled Corn Salad… // Week Night Dinner

DSC_0063I love to cook!!! But I also have a very busy schedule, between work and traveling, I rarely have time to food shop. However I am sure you can all relate when I say… You make time for the things/people you love. You just do!  When it comes to cooking, that’s my philosophy… I love it, so I make time for it.  I also love the whole act of planning a meal; chopping, tasting, and finally the most fun — prepping the plate! Even when I lived alone, I made myself beautiful meals, not every night, but at least once or twice a week… Because hey, I was worth it!

This week is super busy for me, as we are filming a training video for work, with me in front of the camera, on top of that I am recording voice over in the afternoons for another training video (just call me a busy little bee).  However despite the workload there is always time for a home cooked meal, as long as you make it a quick one.   Sunday night I was finally able to dive into the June issue of Cooking Light Magazine and instantly started flagging pages left and right. I finally decided on a main dish from one recipe and a side dish from another, with a few alterations…

For the main dish I followed this recipe, use two organic chicken breast, one lime, chili powder, minced garlic, and sea salt for the kabobs.  I held on to the mango and used that a little later as I prepared the side dish.  The honey-lime drizzle is incredible! I highly recommend you double what the recipe calls for, trust…you will thank me later.  For the side dish I created a version of this recipe, adding mango, omitting ranch dressing, and topping off with the same honey-lime drizzle, mixed with chili powder.

Such a simple week night meal… high on taste and overall aesthetic, but low maintenance as far as time is concerned.  Less than 30mins tops!  The recipe makes enough for two, but it also perfect for one, with just enough left over for lunch the next day.
